Freeze some cookie dough for the holidays

-A A +A
By Susan Lowery

During the holiday season, I like to have cookie dough already mixed up and in the frig, ready to pop in the oven at a moment's notice when friends stop by.

Who doesn't like warm homemade cookies? My grandson Owen.

Right now I have sugar cookie dough in the refrigerator, because it's so versatile and can be dressed up with colored sprinkles, chocolate icing, etc. Peanut butter cookies are also great for this.

You can mix up a glaze out of powdered sugar and peanut butter with a few drops of milk. It makes a plain peanut butter cookie something special and it looks like you worked harder than you did.

Here are two simple recipes, relatively inexpensive to make, and deee-licious!

Susan's Sugar Drop Cookies

1 stick butter, softened

1 c. sugar

1 egg

1 t. vanilla

1/2 c. sour cream

2 c. flour

1 t. baking soda

Dash salt

Mix together butter and sugar well, then add egg and vanilla. Mix together flour, soda and salt and add this mixture alternately with the sour cream. Mix well and refrigerate about half an hour. Roll dough in small balls and roll in sugar. Bake at 375 degrees for 8-10 minutes. Makes 2-3 dozen.

Peanut Butter Cookies

2 1/2 c. flour

2 t. soda

1/4 t. salt

2 sticks butter, softened

1 c. peanut butter

1 c. white sugar

1 c. brown sugar, packed

2 eggs

Mix together butter and sugars well, then add peanut butter and eggs. Mix together flour, soda and salt and add, Mix well and drop by rounded tablespoon onto sprayed baking sheet. Bake at 375 degrees for 12-15 minutes or till done (depends on how big your cookies are.) Makes 5 dozen.
