I've had several people call and ask me what to do with an over-abundance of zucchini or yellow squash. This is a common problem for gardeners-it happens every year.

If you want to freeze the excess, you can. The easiest way is to shred the zucchini, drain and pack in one-cup portions to use in bread, cookies, etc.
