Here are two really good and easy recipes if you need another vegetable dish for a big Easter dinner. I got both these recipes from my mom a long time ago. The Baked Carrots are really delicious. My girls have always loved them.
I also make other versions of Baked Carrots, the easiest being just toss the carrots with salt, pepper and olive oil, then bake in one layer, uncovered. They turn out wrinkly, sweet and delicious.
