Try these easy salad recipes

Trying to eat more salads in the new year? I am, so here are two delicious salads that are extra easy. Each of these recipes can be mixed up the day before you need them. The Fresh Broccoli Salad is one of the many broccoli salads out there, very tasty. I also really like the Artichoke Hearts Salad. It’s something a little different, and will keep several days in the refrigerator.

Fresh Broccoli Salad
1 bunch fresh broccoli, chopped
2/3 c. raisins (I use golden raisins)
1/2 c. peanuts
2 stalks celery, chopped
1 large carrot, diced small
1 T. Parmesan cheese
6 slices bacon, cooked and crumbled
1 c. mayonnaise
2 T. sugar
1 T. vinegar

Mix in large bowl the first seven ingredients. Mix together mayonnaise, sugar and vinegar and mix till sugar is dissolved. Pour over broccoli mixture. Mix and store in refrigerator at least 12 hours. Serves 6.

Artichoke Hearts Salad
1 can artichoke hearts, drained and quartered
1 can garbanzo beans, drained, rinsed
6 green onions, chopped
1/4 c. chopped green, red or yellow bell pepper
1/4 c. chopped celery
1/3 c. olive oil
1/4 c. lemon juice
2 t. parsley flakes
Dash cayenne

Mix all together well and store in refrigerator. Serves 6.
