My stepmother gave me a cookbook a few years ago that included a lot of recipes from Texas, including several great ones from the King Ranch is south Texas.
Over 800,000 acres have been worked by generations since 1853, and the ranch has established itself as a leader in livestock management.
Ancestors of King Ranch founder Richard King still work the ranch, and are known as los Kinenos, the people of King Ranch. The culture has left its mark in the cuisine; the food is generally simple, flavorful and plentiful.
