Mexican Rice
2 T. butter or margarine
1 large onion, chopped
1 green peppers, chopped
2 cloves of garlic, minced
1 cup uncooked rice
1 tomato, peeled and chopped
2 cups of chicken broth
1 t. cumin
Salt to taste
